Prawns are a delectable item that is enjoyed by many the world over which can complement just about any meal or even as a scrumptious dish standing on its own. These small marine creatures have been popular since the earliest days of man and this is a trend that has endured till present times. But there is a long process before your prawns are transformed from raw ingredients in to a finished product. The first step is as always with any dish is the purchasing of your ingredients and it is one of the most important. When purchasing your prawns it is important to remember to make sure that you choose them properly. When buying your prawns make sure that they are in good condition visually which means that there shouldn’t be any bruising or any other obvious damage to the prawns as this will greatly affect the taste of your final dish. Shells should also be firm and possess that shiny look as if they have just been caught. If you’re going to keep them for a longer period then the freezer is your only option. Storing them in the freezer is best done by keeping them in a frozen block form and this can be done both raw or cooked. Either way when doing so it’s best to keep the head on as it serves as an insulator. Always ensure that you store them in a freezer proof container (plastic freezer ware) and filling the container to only three quarters with prawns. The reason for this being that the rest of the room should be left to fill the container with water. Afterward it’s best to seal the container with tap and put a label with the date to know exactly how old the prawns are before you decide to cook them. The next step is the thawing process which is also vital in the delayed preparation process. For prawns one can follow the usual process of thawing from the freezer by placing it in the fridge but a better method is utilizing a brine. To create a brine all you have to do is fill your sink with cool tap water and add some ice to create a slurry of sorts (water filled with solid chunks of ice). Next add some rock salt to the mixture and wait a while before tasting it. If it tastes salty like the sea then you have successfully created an brine. Next add the prawns to the brine and let them thaw. Wait till they are clear of ice but are still firm before removing them. Afterward you can put them in a strainer if you need to cook them or get them ready to serve if already cooked. Another option is to put it back in the fridge. So remember always follow these steps when preparing to cook your prawns. These tips will ensure that you keep your prawns safe to easy as well as delicious to sample.
