VirtualGranny Funky Fudge

A handy recipe to run up if you are visiting friends and need a quick edible gift, or have grandchildren hanging around in the house on a rainy day, looking for something interesting to get stuck in to.

You will need:

450g icing sugar 100g marshmallows 2 tablespoons milk 100g butter (unsalted) Half a teaspoon of vanilla essence Handful of cranberries (any dried fruit or decorations will do) 18cm square shallow tin (Line the bottom with greaseproof paper if you are not using a silicone version.

Method

Measure the icing sugar in to a large bowl. Cut the marshmallows in half and put them in a small pan. Add the butter, milk and vanilla essence. Gently heat the pan, stirring until everything has melted together. Pour the warm mixture in to the icing sugar in the bowl and mix. Spoon the fudge in to the silicone mould or tin, pushing it in to the corners and smoothing the top with the back of your spoon. Sprinkle cranberries or your chosen decorations on top. Leave the mixture to cool and then pop it in the fridge for a few hours to firm up. Loosen the edges of the fudge and then turn it out on to a board. Cut the fudge in to pieces and place in an airtight container in the fridge to firm up.

If the fudge seems a little sticky when you turn it out, don't worry. Simply sprinkle icing sugar on the top and bottom and gently coat each side of the cut fudge pieces, before popping them in the airtight container.

The recipe never fails to impress but clearly you can do a million different variations according to what you have at hand. Here are a few ideas.

Swap the vanilla essence for orange oil, strawberry flavouring or peppermint. Add chocolate to the mix in the pan or stir chocolate drops in to the icing sugar before the warm mixture is added. Dried fruits and nuts can be added to the mix as well as sprinkled on as topping. Coconut, chocolate sprinkles or fairy drops can also make interesting toppings. Food colourings can be used to change the colour and sometimes flavour of the fudge, such as strawberry, coffee or banana.

The fudge squares look rather fab wrapped individually with cellophane from your local florists shop, tied at either end with colourful ribbons and arranged in pretty gift boxes - a great present for your grandchild to make for teacher at end of term, or get your teenage grandson cooking. He can make a gift to impress his latest girlfriend - everyone knows that the way to a girl's heart is through her sweet tooth! Enjoy.
