Coconut Cherry Cupcakes - Really moist and deliciously sweet.

For me and my siblings, freshly baked cupcakes were always a childhood favorite. I can recall us all sitting around the table, in our 2 family home, in the center of Dorchester, Massachusetts. The neighbors used to come by to actually by cupcakes, peach cobblers and other goodies from my mother. She was considered the neighborhood cooking guru...so to speak. She had sort of a cult following... so much so, that there were a couple of celebrities who occaisonally stopped by for some of her famous Bean Pie. I have to admit, that although I loved all of her baked goods, as a child, nothing stood out more for me than her delicious cupcakes. I can remember waiting anxiously, to lick the frosting from the bowl, after my mother would bake them. This delicious recipe, was my mothers and it is now my wifes. Trust me when I say it will have your children wanting to lick the bowl as well. These tasty treats can be described as light, fluffy and sweet. <br><br>Note: You may wish to use candied cherries for added moisture.<br><br>Ingredients:<br><br><br><br><br>8 tablespoon or 1/4 pound of butter.<br><br><br><br>1/2 cup of sugar.<br><br><br><br>2 tablespoon of milk.<br><br><br><br>2 eggs.<br><br><br><br>5/8 cup of self rising flour.<br><br><br><br>1/2 teaspoon of baking powder<br><br><br><br>2/3 cup of dry unsweetened coconut<br><br><br><br>4oz cherries sliced.<br><br><br><br>12 (decorative) Fresh cherries.<br><br> <br><br>Frosting:<br><br><br><br>4 tablespoon of butter<br><br><br><br>1 cup of confectioners sugar.<br><br><br><br>1 tablespoon of milk.<br><br><br><br>Baking Instructions:<br><br><br><br><br>Preheat the oven to 350 degrees F/180 degrees C. Put 12 paper baking cases in a muffin pan.<br><br><br><br>Put the sugar and butter in a bowl and mix together until fluffy.<br><br><br><br>Add milk and stir Slowly add the eggs and beat well.<br><br><br><br>Add sifted flour and baking powder and fold them in with the coconut and some of the sliced cherries.<br><br><br><br>Pour the batter into the paper baking cases.<br><br><br><br>Baker for about 20 - 30 minutes.<br><br><br><br>Sit out on oven rack and allow to cool. <br><br>Instructions for frosting:<br><br><br><br><br>Spread butter in a bowl and beat well.<br><br><br><br>Add milk and confectioners sugar(well sifted) and mix well.<br><br><br><br>Add candied or fresh cherries for the tops. <br><br>This is one of the many recipes from Sister Nadine's Bakery.
