Get a non stick frying pan, and heat up the oil. While your pan is heating on low fire, get a bowl and mix the rest of the ingredients (excluding the apples and cinnamon). Create a batter and make sure that all is blended together well. Scoop a small amount of your batter and pan fry it, until it becomes golden brown in color. Do the same thing on the other side. Once you are done making your pancakes, gently sauté your apples on oil, while adding a dash of cinnamon powder to it. Once the apples are slightly softened, layer some pieces of it on top of the pancake before serving.
