Top Meals On A Budget
It can be easy to have a satisfying and substantial meal but how do you cut down the expense? It's time to get adventurous and understand that it isn't what the ingredients cost but how you use them in a dish.
We have chosen to highlight three of the best meals which use inexpensive and readily available ingredients, and combine to make a stylish meal that the whole family can enjoy. Read on to find out more, and then get cooking!
Bacon and Corn Stuffed Tomatoes
1. Preheat the oven to 200°C/Gas 6/fan oven 180°C
2. Cut the tops off four large beef tomatoes and scoop out the seeds inside before seasoning the inside with salt and pepper.
3. Cut and cook one leek and four rashes of bacon in a frying pan with two tablespoons of oil. Add a little chopped rosemary if you have some available.
4. Utilise 3 slices of day-old bread by cutting into cubes and adding to the pan to brown. Add more seasoning to the mix, 85g/3oz of canned or frozen sweetcorn and some parsley if available.
5. Divide the stuffing between the four tomatoes and sprinkle a cheese of your choice on the top. Place the tomatoes in a shallow greased baking tray and bake in the oven for about 20 minutes.
Enjoy as a starter, a snack, a light meal, or serve with a salad and a handful of new potatoes to create a main meal. Swap the bacon for peppers for a vegetarian option.
Roasted Vegetable Pasta
1. Preheat the oven to 220°C/Gas 7/fan oven 200°C
2. Chop two courgettes, one red pepper and one red onion into long stripes. Place them in a roasting tin. Add some olive oil and some garlic on the top, Toss the ingredients together, season, and leave to roast for 15/20 minutes until the vegetables are turning brown.
3. Boil 300g/10oz of pasta (the kind of pasta you use is left to you) until soft.
4. Drain the pasta and add to the vegetables. Stir in 200ml of crème fraiche and two tablespoons of mustard. Finally add 85g of grated cheese and serve immediately.
This pasta dish is a fantastic family meal which will satisfy hungry mouths. Add diced chicken if you can't imagine supper without meat.
Potato and Salmon Grill
1. Slice 650g/7oz of new potatoes lengthways, leaving the skin on, before boiling for about ten minutes. They should be soft but not breaking up.
2. Add 100g/4oz of frozen peas to the water and simmer for a further two minutes. Drain the water and put the potatoes and peas into a bowl.
3. Drain the water from a 200g can of salmon and flake the salmon. Add the fish to the bowl with the potatoes and peas and season.
4. Put the mixture into a shallow flameproof dish.
5. Spread 200ml of crème fraiche across the top and finish the dish by sprinkling cheese on top of that.
6. Grill until the cheese has browned and is bubbling.
A straightforward dish to prepare and very easy to enjoy. You could swap the salmon for tuna, or use both, if you want to use what is in the cupboard.
