Vacuum packing means a process of packaging that removes air of the package and helps in sealing the package. In this method items are placed in the plastic film package by removing air and the package is sealed. Sometimes they use shrink film for the process. The motive of the vacuum packing is to remove oxygen and to prolong the shelf life of the materials like food. By vacuum packing the bacteria and the fungi growth is reduced and prevents volatile components evaporation. Vacuum packing is used for prolonged storage of fish, potato chips, cheese, meat nuts and so on. For some food items which are so delicate in such case we can replace the interior gas with nitrogen, which has same effect like oxygen (o2). About vacuum chamber machines There are 2 types of vacuum chamber machines. They are 1. Single vacuum chamber machine 2. Double Chamber vacuum machine 1. single Vacuum chamber sealer: It is used for low-medium sized packaging and this apparatus consists of a lid, so first the packet must be placed in a machine and lid must be closed then the first step is air is removed from the packet, then that is sealed after it is filled with some amount of air or retiled and the upcoming pressure squeezes the air. So this is the process involved in single vacuum chamber sealer. 2. Double vacuum chamber sealer: They are used for medium sized packaging. It also contains a lid and the product is placed in a bag and placed in the chamber and first oxygen is removed and it is refilled and then the pack is sealed and compressed with upcoming pressure and can be taken out the lid is automatic for some apparatus. The shelf life of packaged products may vary in meats it is 6 months. High vacuum shrink bags can also be used for vacuuming. History: Dr Karl Busch and wife Ayah Busch initiated vacuum packaging. In 1963 they made the first vacuum pump in Germany. The first used vacuum pump was “Hulked pack”. It became most familiar later on after people came to know the use of vacuum sealer now can’t even assume our kitchen without a vacuum sealer It expands the shelf life of the food. Advantages of vacuum sealer: • It expands the shelf life of the food • It stops the growth of the bacteria • Delicate food items can be comfortably packaged by this process. • Some fluids can also be packed by this process. So vacuum packaging is very much useful for importing and exporting, so they stay fresh until we open the pack.
